Pecorino Le Balze
Fresh Pecorino, aged just 2 or 3 days, when the crust has not formed yet. The paste is very very tender and the taste of sheep’s milk is well perceptible, but sweet and delicate. In Tuscany it is usually enjoyed with fresh beans.
Latte ovino pastorizzato, caglio, sale, fermenti lattici. Crosta non edibile.
Marmellata di zenzero, confettura di pere.
